Breaking The Fast:

 In Morocco during the fast of Ramadan a cannon is fired at sundown.  This signals the fast may be broken.  Most families break their fast with a bowl of Harira, a spicy lamb tomato soup, which has been simmering on the charcoal brazier since before dawn.  Here is a delicious recipe for Harira that I brought back home with me from my two year stay in Morocca.

A day before you want to make the soup mix 1/3 cup of flour with 1 cup water.  This provides a thickening for the soup as well as its unique, slightly sour flavor.

Lamb shanks are good for the dish, or a leftover uncooked leg of lamb which still has a small amount of meat.

In a deep pot brown ˝ lb. Lamb meat cut into small pieces, 2 large chopped onions, a pinch of saffron and 2 TB sweet paprika.  Add 6 C water, soup bones, 2 TB salt, ˝ t pepper, and ˝ C lentils.  Cover and simmer for 2 hours.  Remove bones, take meat off and return meat to pot.  Add a small can of tomato puree.  In a blender or food mill blend 1-2 bunches cilantro (depending on the quality of cilantro and how much you like the taste) and flour and water paste.  Add to the pot along with 3 C of water.  Return pot to a boil then add 1/3 C vermicelli broken into 1” pieces or rice.  When vermicelli is cooked add 1 TB butter and the juice of one lemon.  You can also add canned garbanzo beans at this point.

The soup should be velvety, so add water or flour thickening if it is not.  Adjust seasoning and serve.

1/3 cup flour
1 cup water

2 medium lamb shanks
2 large onions (chopped)
2 Tbls sweet paprika
9 cups water
1/4 tbs. saffron
soup bones
pepper to taste
2 Tbls salt
1 cup lentils
small can tomato paste
cilantro to taste
1/3 cup rice of vermicelli (broken into 1" pieces)
1 Tbls butter
1 can garbanzo beans (optional)
